2015 Pinot Gris Fumé
A unique fully dry Pinot Gris aged for almost two years in old french oak barrels, this wine is about texture. Aromas of ripe peach are followed by passionfruit, spice, and flinty minerality on the palate. Complex yet crisp and refreshing, this is wonderful with food!
We make a traditional Pinot Gris every year, but we also like to explore the capabilities of the Pinot Gris grape with special limited production wines. This Fumé falls into that latter category. Grapes were harvested by hand, crushed by foot and given a few hours with the skins. Then they were pressed in our vertical basket press, and put into older (neutral) french oak barrels to be fermented by our indigenous yeasts. The young wine was aged on the lees for a full 22 months, much longer than is usual. The combination of the natural acidity of our Pinot Gris, extended skin contact time, and extended time on the lees and in barrel lends this wine a hint of colour and a wonderfully complex texture. It is completely dry, and fits our ideal of a natural wine (fermentation by indigenous yeasts, no additions of enzymes or fining materials, minimal use of sulphites).
13.7% alcohol, pH 3.2, 50 cases produced. Vegan friendly.
